NAKED CAKE TUTORIAL

My sister-in-law is getting married tomorrow (January 8, 2015). It's a rustic garden themed wedding at Le Jardin Rosella, Tagaytay and she asked if I can make her cake. When I asked what her peg was, she said that she wanted something simple and rustic. 

She wanted a naked cake.


For those of you who don't know what a naked cake looks like, there are tons of pictures available in the internet, but just so you won't have to click on a new tab, below is a sample photo.

This is probably any baker's dream, to make a naked cake. You don't have to worry about making your frosting perfect or making your cake even. All you have to worry about is making sure that your cake is moist and that your flavors are bursting with every bite.


I am now going to share with you how I made a very simple Moist Chocolate Cake with Espresso Buttercream Naked Cake.


Here are the ingredients:


CAKE

1 3/4 Cups All Purpose Flour
2 Cups Sugar
3/4 Cups Cocoa
2 teaspoon Baking Soda
1 teaspoon Baking Powder
1 teaspoon Salt
1 Cup Buttermilk
1/2 Cup Vegetable Oil
2 Large Egg
1 teaspoon Vanilla Extract
1 Cup Espresso Coffee

BUTTERCREAM

6 oz. Milk Chocolate, melted and cooled
1 Cup Butter, Room Temp.
1 Egg Yolk
1 teaspoon Vanilla Extract
1/2 Cup Confectioner's Sugar
1 Tablespoon Instant Coffee Powder
2 teaspoon Hot Water

STEPS FOR THE CAKE:

1.) In a bowl, mix together all your dry ingredients

2. In another bowl, mix together all your wet ingredients.



3.) In a stand mixer, mix your wet and dry ingredients together in medium speed.


As soon as the ingredients are well incorporated, you may go ahead and put it in a lined pan and bake for 30-45 minutes at 180 degrees Celsius.


Remove from pan and let it cool down on a wire rack.


Using a serrated knife, cut the cake into half. Do not worry too much about the top of the cake because a naked cake is all about it's natural beauty.


STEPS FOR THE FILLING:

1.) Cream together the butter, yolk and vanilla. 
2.) Once fluffy, gradually add the confectioners sugar. 
3.) Combine the coffee powder and water and add them to the melted chocolate. 
4.) Slowly add them to the butter mixture and beat in medium speed with a paddle attachment until fully incorporated and fluffy.





Assemble your cake like you normally would, only this time, making sure that there is sufficient amount of filling between the layers.





I wanted to use fresh flowers to design my naked cake, so before heading on to the venue, my husband and I stopped over to one of the many flower shops along the highway of Tagaytay City to buy some fresh flowers and twigs.
